Our Story: Back in March of 2010 we made our first batch of popsicles. The flavor was Hibiscus Tea and they were a gorgeous indigo/red color, glistening in the fluorescent lights of the commercial kitchen we rented. They were even prettier in the sunshine, and they tasted divine.
We began selling them at the Farmers Market in Charlottesville that April with about 5 flavors, by the end of the summer, we usually had 10 or 12 flavors, depending on what local fruit was in season.
The only creamy flavor we had back then was banana-chocolate-walnut – it had a little bit of coconut milk in it. Since then we've used organic coconut extensively making the Chocolate Sea Salt and it’s many variants (with peanut and banana, and also with pumpkin among other combinations).
The White Beach series is basically coconut milk, lemon, vanilla, and whatever fruit looks wonderful at the produce companies or from the local growers of berries and orchards.
So now it’s 2014 and Pantheon is still pretty much a seasonal (April-October) enterprise. We aren’t trying to invade any Whole Foods stores, or franchise our little business (we have pops year-round in just ONE location – the Market Street Market on Market St in Charlottesville).
So to sum it up, we just want to make some nice, tasty ice pops and serve them to people in the Charlottesville area when the weather’s warm and warmer. 'S wrong with that?
